Color Me Domestic - Apricot and Chicken Soup


Summer soups are usually chilled and have watermelon and mint and refreshing flavors. This summer has been cooler than average so this Apricot and Chicken Soup balances summer flavors in a warm and cozy way.



This recipe is easy but the flavors are complex. I recommend enjoying it on your patio with shorts and a sweater on! Doesn't that just sound dreamy?!

Apricot and Chicken Soup
Ingredients
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, crushed
- 2 skinless, boneless chicken breasts, cut into bite-size strips
- 5 cups chicken stock
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 1 cup ready-to-eat dried apricots, chopped
salt and pepper to taste
- 2 tbsp chopped fresh parsley (optional)

Process
Heat the olive oil in a large saucepan. Add the onion and garlic, and cook gently for 4 minutes. Add the chicken, then pour in the stock, and stir in cinnamon, ginger, and apricots.

Bring the soup to a boil. Reduce the heat, cover the pan, and simmer the soup for 20 minuets, until the chicken is cooked.

Add salt and pepper to taste and serve. Top with fresh parsley if you're interested but it isn't necessary.
