Asian Turkey Meatballs


Teacher always said; "Sharing is Caring" so when something this delicious comes along we at CMS have a duty to spread it far and wide! Credit for the meatballs goes to Gina Homolka of Skinnytaste. Seriously, this dish is scrumptious.
And, super easy to make. Chop the stuff, mix it (with your hands), form and bake. 
For the Meatballs:
  • 1/4 cup panko breadcrumbs (you can usually find it in the bulk section at Whole Foods so you can buy just a 1/4 cup not a gigantic box)
  • 1&1/4 lb ground turkey breast
  • 1 egg
  • 1 tbsp ginger, minced (chopped really small) (also you can just break off a chunk about an inch square from the bigger ginger chunks, it should cost you a dime at most)
  • 1 clove garlic, minced
  • 1/2 tsp salt (aka, 12 healthy shakes or so)
  • 1/4 cup fresh cilantro, chopped (We'll feature another recipe - or two - with cilantro since you can’t buy less than a bushel)
  • 3 scallions, chopped (green onions)
  • 1 tbsp low sodium soy sauce
  • 2 tsp sesame oil
For the Dipping Sauce
  • 4 tbsp low sodium soy sauce
  • 2 tsp sesame oil
  • 2 tbsp fresh lime juice (about one lime)
  • 2 tbsp water
  • 1 tbsp fresh scallion, chopped (green onion, about one)

Get to work:
  • preheat the oven to 500 degrees and spray a cookie sheet with non-stick spray
  • chop the ingredients and put them in a bowl (above)
  • mix up the stuff in the bowl with you hands - this gets gooey but it really the only way to get it done right
  • take about 1/4 cup (small handful) and form into meatball in your hands - basically, roll slash toss it back and forth in your hands
  • place on cookie sheet (you should have about 12 meatballs)
  • bake for 15 minutes
  • meanwhile - mix together all the ingredients for the dipping sauce
  • drizzle the meatballs with two spoonfuls of sauce right when they get out of the oven and serve!
We paired ours with an un-fried rice (white rice mixed with frozen peas that were thawed in water and then sizzled/sauteed with butter after draining them) and a brew!
