Color Me Domestic - Lemon Rosemary Chicken


Dinner tonight? It is as easy as 1 lemon, 2 garlic cloves and 3 rosemary sprigs (or any other fresh herb you have) and olive oil and chicken breasts!

And, it gets easier... throw them all together in a bag (squeeze the lemons to let the juice out) in a zip locked bag and poke the chicken with a fork to let the flavors in. The longer it sits the better so throw it together the night before or in the morning on your way out the door.

Prepare the chicken however you like (baked, grilled, sauteed) and serve with a salad.

This recipe is adapted from the book French Women Don't Get Fat by Mireille Guiliano. Dried herbs work fine too. The rule of thumb is that one teaspoon of dried spices equal one tablespoon of fresh.

    PLUS - I love knowing that conversion rule for dry to fresh herbs.
